FLAMING OATS® Cheezy Chive Vegan Mac and Cheese

Let’s be real, mac and cheese is the Aaron Pierre of comfort food. But what if you could have that same creamy, cheesy satisfaction without the dairy bomb and nut-free? Enter: Vegan Mac and Cheese made with FLAMING OATS® Cheezy Chive flavor. 

This recipe isn’t just another “kind of cheesy” plant-based dish, it’s smooth, velvety, and packs a rich, savory punch with tons of protein that’ll have you licking the spoon. The oat flour made from FLAMING OATS® gives you a silky roux (fancy French word for creamy sauce base), while nutritional yeast delivers that crave-worthy cheesy flavor. It’s quick with superfoods, and guaranteed to make even your dairy-loving friends say, “Wait, this is vegan?!”

Ingredients and Instructions:

For the pasta:

  • 1 cup :: Elbow macaroni (or any pasta you love)
Cook dry macaroni according to package instructions. Drain and set aside.

For the cheese mix:

  • 1 pack   :: FLAMING OATS® Cheezy Chive (or any flavor you love)
  • 1 cup     :: Plain unsweetened plant milk (or any milk you love)
  • 1 ½ tsp :: Blue Agave sweetener (or any sweetener you love)
  • 2 tsp     :: Dijon mustard (or any mustard you love)
Add all ingredients (including olive oil & hemp hearts from foil packet) to a blender and blend until silky smooth. 

For the Mac ’N’ Cheese:

In a saucepan, add cheese sauce over medium-low heat. Whisk constantly until it thickens (be careful not to scorch it) about 3 minutes. Remove from heat. Toss in the cooked macaroni. Stir. Garnish with toppings (optional) and devour immediately.

Optional toppings and add-ins:

  • Bread crumbs toasted in olive oil
  • Fresh chives or parsley
  • A sprinkle of smoked paprika or chili flakes
  • Spice lover? Toss in cayenne or jalapeños for a kick.
Serves 2 hungry humans (or 1 if you’re going all in with zero regrets).
